A Complete Protein Plant Powered Breakfast Recipe

Raw Vegan Berry Protein Blast Smoothie Bowl Recipe

This breakfast bowl is packed with nutrient-dense ingredients that target hydration, energy, and all the nourishing factors at cellular level.

Ingredients:

  • 6 honey or Ataulfo mangos, diced
  • 6 fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup sprouted buckwheat groats (dehydrated)*
  • 1 tablespoon chia seeds
  • 1 teaspoon unsweetened shredded coconut
  • 1/2 pineapple, cut into chunks
  • 1 apple or pear, cut into chunks
  • 1 cup frozen mixed berries (raspberries, blueberries, blackberries)
  • 1 scoop of Garden of Life Raw Organic Vanilla Protein Powder (optional – This will add an additional 20g of protein)

Instructions:

  • Blend the last 4 ingredients in your Vitamix or high speed blender. This will be your smoothie mixture.

  • Add the diced mangos and buckwheat groats to a small to medium sized bowl. Depending on how much you think you’ll eat.

  • Pour the smoothie mixture into the bowl.

  • Top off with the strawberries, blueberries, chia seeds, and coconut shreds.

You now have yourself a 100% raw vegan, highly nourishing, complete protein smoothie bowl. Enjoy!


*Nutritional Side Note: The buckwheat groats are a complete protein and are also a great source of iron. Additionally, dehydrating them after soaking and sprouting them, will make them crunchy and easier to digest. (See below for dehydrating instructions)

This recipe is meant to serve one for a complete meal. However, if you’re new to eating raw, then it’s preferable to eat as much as your body allows.

Share the rest or store in the fridge for later. Just be sure to store it in an airtight container or mason jar.

How to Make Buckwheat Cereal

I typically like to make a good sized batch to have ready for whenever I feel like making cereal. Having a batch ready to go makes it a lot easier.

If you store the dehydrated buckwheat groats in an airtight mason jar or container, they can last for months. So, I highly recommend doing this.

If you don’t own a dehydrator, you can find some good ones on Amazon. This is the one I have and it works great.

Okay, lets jump to it…

Step one:

Rinse, soak, and sprout 2 cups of buckwheat groats for about 1-2 days or until the little tails start to appear.

Step two:

Rinse well. Then, spread the sprouted groats evenly on a dehydrator sheet. Use as many sheets as you need depending on how much you have sprouted.

Dehydrate at 106 for 8 hours.
