Recipe: Raw Vegan Eggnog

I have been making this eggnog for the past 4 years and I LOVE it! Before this, I used to drink the typical eggnog drink with rum and all the junky ingredients that came along with it. Then when I transitioned into eating raw, plant-based foods, I explored alternative ‘eggnog’ options and even tried the vegan ones sold at the grocery stores such as So Delicious, Silk, Califia and Almond Breeze. They weren’t too bad, but they lacked the thick and creamy texture I wanted. Plus, I wanted a much cleaner, homemade alternative. 

So after exploring and playing around with recipes, I came up with my own. This time without the rum! Lol. It wasn’t long before it gained popularity so trust me when I tell you, you are going to love it! 

Raw vegan Christmas nog’ recipe (updated)

INGREDIENTS:

  • 2 cups pecans
  • 4 cups distilled water
  • 1/2 cup coconut cream 
  • 9-10 medjool dates, pitted
  • 1 tablespoon cinnamon
  • 1 tablespoon nutmeg
  • 1 vanilla bean (or 2 teaspoons vanilla extract) 
  • 1/4 teaspoon nutmeg for sprinkling

INSTRUCTIONS:

Blend it all ingredients in your Vitamix or high speed blender of choice. You should end up with a thick and creamy consistency. If you want it thicker, add more pecans and dates. You can also add in more coconut cream. To thin it out, add more water. 

Top off with So Delicious plant-based Coco Whip if you’d like and a sprinkle of nutmeg. 

I don’t usually measure and just throw in the ingredients. I like to taste as I go. It’s quick and it’s easy – just as I like it! So, just play around with the ingredients to reach your desired taste and consistency.
