Eating raw does not necessarily mean making salads and smoothies all the time. Making tasty, delicious soups are also a part of the meal making process. And, if you let your use your taste buds lead the way, you’ll be creating delicious raw vegan meals in no time…
… or you can just keep coming back for more recipes!
This week I was inspired by one of Ms.Tanny Raw’s raw vegan recipes and decided to make one of my own. All you need is a Vitamix or high speed blender of your choice and the ingredients listed below to get this winter soup going so you can fuel your body with nutrient rich goodness!
Butternut Squash Tomato Soup Recipe
½ cup raw walnuts
1-¼ cup cherry tomatoes
½ lemon, juiced
3 large carrots
½ cup butternut squash (fresh or frozen)
1 cup distilled water
1 tbsp. Wakame seaweed
1 tbsp. Frontier Garlic & Herb seasoning
1 tbsp. Dulse granules
Blend all ingredients except Dulse granules in your Vitamix blender until smooth and creamy. If you want a chunkier version, roughly blend the ingredients or pulse it in your food processor and you’re good to go.
Sprinkle dulse granules over soup and voila… perfection.
For the salad…
3 cups of freshly chopped romaine lettuce
1 cup red (purple) cabbage, shredded
¼ sliced onion
1 small beet, shredded or julienned
1 cucumber, sliced
1 tbsp. dulse granules
½ lemon, juiced
1 tbsp. Bragg Liquid Aminos or Coconut Aminos for a sweeter taste
1 tbsp. raw tahini
Combine all ingredients in a medium-large salad bowl. Sprinkle more dulse on top if desired.
