With this recipe, you will not only be satisfying your sugary ice cream cravings, you are going to feel hydrated and re-energized when you’re done! Plus, it is sooo easy to make.
I have to say that one of the best things about having to stay home is being able to share more and getting those creative juices flowing!
Let’s jump into this recipe…
For the ice cream, start by adding in to your Vitamix or high speed blender of choice…
5 ripe frozen bananas
1 cup frozen cherries
1 cup frozen jackfruit – if you don’t have access to jackfruit, that’s OK. This one is optional so you can leave it out.
½ cup coconut water – I like to use coconut water because it gives it a sweeter taste but you can always just use water if you prefer.
And, last but not least, a heaping tablespoon of Almond butter
Go ahead and blend until it’s smooth and creamy.
Next, scoop out this yumminess into your favorite ice cream bowl.
Then, begin layering your toppings…
For this recipe, I’m using fresh sliced strawberries, frozen blackberries, fresh cut mango chunks, coconut flakes, Pure Bliss organic Cashew Butter Hemp Granola and a sprinkle of Chia Seeds..
It’s very similar to a smoothie bowl – especially the ones I make. I like to make mine thick and creamy.
Although when I make ice cream, I do make them thicker with an “ice cream” consistency but still love piling on the toppings. That’s the best part!
So, there you have it… My deliciously addicting Banana Cherry Ice Cream Delight!
If you don’t have all the ingredients to use for toppings, just use what you do have. This is definitely not a time to be picky since our access to certain ingredients is limited.
